Raucous Randy Rooster Soup

A friend of mine keeps chickens.  The hens are so cute, running around her backyard, pecking at bugs, laying eggs.  It’s a fun hobby for her that she keeps up despite going to school, working and running after two active toddlers.  I remember those days and how exhausted I was so it’s amazing to me that she can do it all.  She shares eggs with me when she has enough and I am so grateful for them because even after all these years I can remember the fresh eggs we got from our chickens when I was a kid.  Industrial farm raised eggs can’t hold a candle to farm eggs from chickens who run around and act like chickens!  There’s a pun there for those of you who were raised around farming…

When she ended up with a randy, raucous rooster in her little flock she thought for a while that it would be ok.   When he started attacking everyone and everything around him, she decided he had to go and he ended up in my soup pot…

Ingredients

Scale
  • 1 rooster or small chicken, cup up
  • 1 bay leave
  • 8 cups water
  • 1 1/2 cups chopped celery
  • 1 small bag of baby carrots
  • 1 t herbes de provence
  • 1/2 cup instant barley
  • 1 t salt
  • bouillon cube (optional)
  • fresh ground pepper to taste

Instructions

  1. Cook the chicken or rooster in water with the bay leaf for about 3 hours on simmer
  2. Let cool, remove chicken and take the meat and skin off the bones, shredding it into smaller pieces
  3. Saute the celery and carrots in a little olive oil for about 10 minutes in a large pot
  4. Add the broth and meat, herbes de provence, barley, salt and bouillon cube (if desired)
  5. Simmer for another hour or so

    What a great recipe for a cold and blustery day (like we’re having). However, no rooster here – guess chicken will have to do! Bob loves barley, so this is a nice change from noodle. Happy Holidays to you.

    I just silenced 3 roosters. When I click 3x I feel that’s an awful lot. I’m gonna go with the 2x recipe and report back. Sounds amazing 👏
