Artichokes with Vinaigrette

I love artichokes! Who knew a thistle could be so tasty? I sometimes wonder about the first person to try an artichoke, were they really adventurous or really hungry? What about the first person to eat a lobster? Had to be pretty brave, I’m thinking….

Anyway, try this sometime when you are craving a thistle!

It’s simple, tasty and impressive. You can’t really ask for much more out of a recipe.

Don’t let trimming and steaming them intimidate you.  Just trim the tops of the leaves, pull off any leaves near the bottom that look tough and clean out the choke (the fuzzy part) after they’ve cooked.  It’s pretty darn easy.  

Steam for about 30 to 35 minutes on the stove top or 20 minutes in a pressure cooker or instapot.

Artichokes with Vinaigrette

Ingredients

Scale
  • 2 artichokes
  • 1/4 C champagne vinegar
  • 1 clove garlic, chopped
  • 1 t dried basil
  • 1/2 cup olive oil

Instructions

  1. Steam the artichokes until soft
  2. Blend the rest of the ingredients in a blender

Easy, peasy.  I use a pressure cooker to steam my artichokes because it takes so long to do it at this altitude.

 

serve warm, it’s a nice snack, appetizer or light lunch…

    I love artichokes too, but just don’t know how to cook them. I bought pickled artichokes to eat with sandwiches.

    question — don’t you have to trim these puppies? (I’ve never tried to cook an artichoke and would love to, but if it involves too much surgery, I’m somewhat derailed.)

      Dear Sue,

      I trim the tops a little and then just either steam them or stick them in the pressure cooker.

      They are really pretty simple!

    Artichokes! The yummiest, especially prepared with a simple dipping sauce like yours. The flavors are enhanced not overwhelmed.

    Had my first when I moved to San Franacisco in the late 70’s and I haven’t looked back since. Fave is to finish the leaves and dig out that choke for a special treat. Thanks.

    Artichokes – my husband’s favorite vegetable! You are fortunate to be closer to the source…we have to really examine the offerings by the time they arrive in Northern Wisconsin…every once in a while we get some really nice ones.

    I hate to admit to you that I’ve never prepared an artichoke. I came by to wish you a Happy Thanksgiving. Is it still dry by you? So dry here on CO – even worse in the mts than last year at this time. I’m hoping for some snow. Have a great Holiday weekend.

    I think that’s a very good thought … I would have liked to have watched the first person who tried to eat an artichoke. Anyway, I’m glad they did, aren’t they wonderful. And thanks for one more flavor to serve with this wonderful treat.

    Hi M.W. ~~ Your idea of a vinagarette dip sounds nice. I have never cooked an artichoke but have eaten a lot. I have to eat them the way they are made by the cooks’ intentions.

    I actually never really liked artichokes much…maybe it’s because whenever I had it it was just slightly pickled and frankly they didn’t taste like very much. Maybe I should try it a different way, like yours!
