Caramel Pecan Ice Cream

This recipe for Caramel Pecan Ice Cream came with my Kitchen Aid ice cream freezer attachment.  I made it a night or so ago and ate every single bite.  It’s just the perfect thing to cool off after a long day (except maybe for a gin & tonic, but you can always have one of those also).

Caramel Pecan Ice Cream

Ingredients

Scale
  • 3 1/2 cups whole milk
  • 1 can sweetened condensed milk
  • 1 cup warmed caramel sauce
  • 1 package instant cheesecake pudding mix
  • 1 t vanilla
  • 1/8 t salt
  • 1 1/2 cup chopped pecans

Instructions

  1. Whisk all of the ingredients except the pecans in a medium mixing bowl until blended
  2. Cover and refrigerate for 6 hours
  3. Freeze according to the directions on your ice cream maker
  4. Add the pecans at the end
  5. Place in the freezer for a while until it firms up

    Sounds really good. 🙂 And nice use for the “I” also.

    I like the idea of adding the pecans later when it is starting to set up. That should allow them to be distributed fairly evenly throughout insteat of settleing to the bottom.

    I have wondered if Blue Bell and other commercial blends have added some extra pecan flavor. Seems hard to get enough of the nut’s flavor with just them.

    Let us know when it is ready, I will save some room for your pecan ice cream.

    I made my first ice cream with condensed milk a few months back. It was divine. So when I saw that ingredient on your list, I KNeW this would taste wonderful. How unusual to use cheesecake pudding mix in it. I really must try this recipe!
