Breakfast Main Dishes

Frittata

For an easy peasy lunch or dinner or for a little more labor intensive breakfast (I typically like my breakfast fast and easy), try a frittata.

 

Ingredient list:

2 T olive oil
1 yellow onion
1 small zucchini
1 small red pepper
1/2 dozen or so small black olives
1/4 cup Gruyere cheese
1 T chopped parsley
6 eggs

Here’s my version (adapted from Martha’s version)

Start with some sliced onions, any color will do

some sliced zucchini

red peppers

and olives

grate some Gruyere cheese

crack a half dozen eggs, and whisk them thoroughly

chop some fresh parsley

then coat the bottom of an ovenproof pan with a little olive oil and put the onions in it and place under the broiler on high for a few minutes or until they look like this

take out of the oven and start to assemble the frittata
zucchini

peppers

olives

gruyere cheese

parsley

Pour the egg mixture over the vegetables

sprinkle on some salt and a few grinds from the pepper mill and put in a preheated 450 degree oven. After you put the frittata in, reduce the oven heat to 400 degrees and let it bake until it’s puffed up and the center is set (about 20 minutes)

If you decide to make this for breakfast, I would recommend doing it the night before and reheating it in the morning, knives and early mornings before coffee are not something I deal with very well.

And you thought I never made anything remotely healthy

    Okay, that looks so delicious! I really shouldn’t have skipped lunch today. I love how you show step by step pictures. I am a horrible cook, and make anything without someone walking me step by step through something.

    Oh! I LOVE frittata! It’s the easiest thing to make and very fast to whip up and cook. Plus it’s pretty healthy. I normally keep mine pretty simple but I love all the veggies that you added in yours. I might try making this on the weekend 🙂

    Rocky Mountain Woman you did good! I love to make frittatas. It is an excellent way to incorporate lots of veggies in the diet and use up leftovers.
