Egg Salad with Green Olives

I’m an egg salad fanatic! This particular version is one of my all time favorites…

Ingredients

Scale
  • 3 hard boiled eggs, minced
  • 3 T feta cheese, crumbled
  • 3 T green olives, minced
  • 1 T parsley, minced
  • 3 T mayonnaise
  • 1/8 t garlic powder
  • 1 1/2 t red wine vinegar

Instructions

  1. Combine eggs, cheese, olives and parsley in a large bowl

  3. mix mayo, garlic powder and red wine vinegar together
  4. stir into egg mixture

This is great in a pita, on whole wheat bread or with crackers and wine as an appetizer..

    I am going to try this! My mother made the very best egg salad when I was a kid. I think her main ingredient was Love. I could never duplicate it. Have a wonderful week. Hugs, Anne

    Egg salad is exceptionally delicious…and I always love it with green olives!

    It’s also yummy on lettuce leaves!
