Pasta, Pesto, and Peas a la Ina

I love Ina Garten! I have all of her books and use them A LOT. This is probably my hands down favorite recipe of hers, well..except for her Roasted Caprese Salad, and well her Chicken Pot Pie is to die for…

That being said, I have made a few adjustments to the recipe, but the bones of it is all Ina

Pasta, Pesto, and Peas a la Ina

Ingredients

Scale
  • 3/4 lb fusilli pasta
  • 3/4 lb bow tie pasta
  • 1/4 C olive oil
  • 1 1/2 C pesto
  • 10 oz package of frozen, chopped spinach, thawed, rinsed and patted dry
  • large lemon
  • 1 1/4 C Mayo
  • chunk of Parmesan
  • 1 1/2 C frozen peas
  • 1/3 C pine nuts
  • 3/4 t Kosher salt
  • 3/4 t pepper from the mill

Instructions

  1. Cook the fusilli and bow ties according to package directions, toss in a large bowl with the olive oil, set aside
  2. In the bowl of a food processor with a blade, mix the pesto, spinach, the juice from one lemon and the mayo
  3. Process until smooth
  4. Mix the dressing with the pasta
  5. Add the peas, pine nuts, salt and pepper
  6. Mix thoroughly
  7. Add shaved Parmesan to the top

    I would love your Pasta with my first taste, I know. Your ingredient list is long, too long for my kind of cooking. I think Mrs. Jim would make it though, I will check.

    This will fit perfectly into my current attempt to eat more Mediterranean. I have everything but the pesto. Like the idea of freezing it so you have it always on hand. Thank you.
