Pork Scallopine w/Caper Sauce

Crisp and surprising light, this was a big hit in my house.  I cut these from an inexpensive pork roast so they were just a little bit tough, but the flavor made up for any lack of tenderness.  Easy enough for a week night dinner, but still impressive.  I love food that makes you look like you know what you’re doing!

I served this with a nice crisp Chardonnay…perfecto!

    I love scallopine at restaurants, but haven’t made it at home. This looks like a great recipe to make at home.

    What about the anchovy paste – I thought that was really an unusual ingredient but then couldn’t find it in the steps – did I miss it? Also – try Sears for bathing suits (do NOT go to stylish swimsuit shops in an upscale mall – unless you want a bejeweled suit that costs $$$). But be prepared – they’re made of some tight girdle-like material nowadays. Mine is a simple tricolored tank.

      Yikes! I forgot about it. It goes in with the capers, I’ve fixed the instructions. I am trying to branch out a little and develop some of my own recipes and sometimes get moving so fast I forget to write everything down. Typically, I figure it out the second time I make it, but this one turned out so good, I just posted it.

    That caper topping sounds perfect and like it could be used for other meats too like a nice piece of fish! 😀
