Salad instead of Snow!

I heard last night on the news that we may get snow tonight. Snow, you know, it looks like this:

I don’t particularly like snow – it’s pretty to look at but terrible to drive in and work in…

So I have come up with a plan and I’m hoping you guys will help me out. I think if we just keep wearing shorts and flip flops and drinking white wine and making salads and acting all easy peasy like it’s summer, maybe we can keep the snow away for a little while?

Hey, it’s worth a shot!

Here’s my favorite late summer salad in case you want to play along:

Salad instead of Snow!

Print Recipe

Ingredients

Scale
  • 1 cucumber, sliced
  • 1 handful cilantro
  • 1 bunch salad greens
  • 1/2 C cubed white cheese
  • 2 green onions, sliced
  • 2 T walnut oil
  • 2 T olive oil
  • 2 T Sauvignon Blanc
  • 2 T white wine vinegar
  • juice from one lime
  • drop or two of honey
  • salt and pepper to taste

Instructions

  1. Wash and cut up the greens and add to the salad bowl with the sliced cucumber, white cheese, green onions and chopped cilantro
  2. Whisk the other ingredients together and drizzle just enough over the salad to make it glisten
  3. Salt and pepper to taste
  4. Serve with the balance of the dressing

    Well, since we rarely get snow in TX and it’s blistering hot in the summer, I’m looking forward to cooler weather! But, just for you, I will eat salads and wear shorts — it doesn’t get cold here until January anyway!!!

    I think too, I prefer salad instead of snow, though the chance to take photos of fresh snow is always a delight.

    Although Autumn is my favorite time of year, I am with you about snow. Do not want to see it, except in photos – that belong to someone else. I vote for flip flops and green salads too!

    I’m the odd gal out this post. I love snow and have had my down jacket out for a few weeks even though I know snow or even really cool weather is a LONG way off. Hope your warm stays for a long time yet. Salad is great anytime.

    Not good with flip flops, but I do wear sandals or open toed shoes all year if that helps. I do promise however to drink lots and lots of white wind.

      I bet it would be great if you used parsley instead of cilantro. It would still have that freshness without the cilantro flavor.
