This was my breakfast this morning and it’s almost two o’clock and I’m still not hungry.
1 small avocado
1 small tomato
1/4 c Italian bread crumbs
1/4 c finely grated pepper jack cheese
Slice the tomato and dredge in bread crumbs, fry in olive oil on medium high heat until the crumbs crisp a little
while it’s frying poach two eggs
peel and slice the avocado, place on plate, sprinkle with salt and pepper
then the poached eggs and then the jack cheese and more salt and pepper
the egg yolk/avocado mixture is a marriage made in heaven…
