Ok, stick with me here. I know this sounds crazy, but the combination of butter beans and burrata with basil and olive oil is off the charts delicious! Really! I wouldn’t steer you wrong would I?
I know it looks a bit messy, but it’s a lovely, comforting mess and if you will trust me and buy a can of butter beans and some burrata, I think you’ll be happy you did.

Ingredients
1 15 oz can of butter beans (If you can’t find butter beans, cannellini will do)
1 or 2 balls of fresh burrata
1/4 C extra virgin olive oil
Salt and pepper to taste
1 fresh lemon
3 T fresh basil, chopped
Crackers for serving
Instructions
Drain and rinse the beans
In a small pan, heat the beans over low heat, adding a generous squeeze of lemon juice and a drizzle of olive oil, adding salt and pepper to taste
Remove from heat and stir in chopped basil
Place the beans in a large serving bowl or on a platter, tear the burrata into large pieces and top the beans with it
Sprinkle with more olive oil, salt, pepper and lemon
Serve with crackers
