You can make this flank steak salad on the grill so your kitchen stays nice and cool, or you can do a combo of the grill and the oven or you can do the whole thing in the oven. However you make it, it’s the perfect hearty summer salad that you can whip up in a jiffy.

Ingredients
1 1/2 lb of flank steak
salt and pepper to taste
2 medium summer squash, cut into 2 inch pieces
1 medium onion, sliced
1 T sesame oil
1/3 C mayo
4 t rice vinegar
2 t soy sauce
2 t ketchup
1 t sugar
1/2 t garlic powder
8 cups chopped romaine
Instructions
Toss the squash and onion in a large bowl with 1 t oil and salt and pepper
Either grill the vegetables in a grill basket or roast them in a 400 degree oven for about 10 or 15 minutes until they start to char
Sprinkle the steak with salt and pepper and grill, turning once, for about 3 to 4 minutes per side
Combine mayo, vinegar, soy sauce, ketchup, sugar, garlic powder with 2 t of sesame oil in a small bowl
Slice the steak thinly and serve on the lettuce with the vegetables and salad dressing
