Green Chili Shashuka

This will get your motor running in the morning! So hearty, you won’t be hungry for hours. If you don’t have a good recipe for green chili here’s one you can try: https://therockymountainwoman.com/green-chili/ that isn’t too hot, so the leftovers will work well with this recipe. Add a bit of sour cream and maybe a pickled jalapeno or two and life will be pretty interesting, or at least breakfast will!

Spicy breakfast variation on Shashuka made with green chili

Ingredients

Scale

2 C Green Chili 

4 eggs

4 corn tortillas

cilantro and sour cream to serve

Instructions

Place about 2 cups of green chili in a smallish skillet

Bring the chili to a simmer

Make four indentations in the chili and fill with eggs

Cover with aluminum foil and transfer to a 400 degree preheated oven

Bake for about 10 to 12 minutes, or until the whites are set but the yolks are still runny

While the eggs are baking, fry 4 corn tortillas in a little bit of oil until crispy

Serve the shashuka on the corn tortillas, topped with sour cream and cilantro
